28 Mar Toasted Seed Spinach Salad
Not seedy as in down-and-out but packed with toothsome toasted seeds that deliver a righteous crunch.

Ingredients
- 1-2 tablespoons pumpkin seeds, toasted
- 1-2 tablespoons sesame seeds, toasted
- 1-2 tablespoons poppy seeds, toasted
- 1 tablespoon lemon juice
- Pinch salt, pepper and coconut sugar
- 3 tablespoons organic olive oil
- 4 cups baby spinach, rinsed
Directions:
- Heat skillet for about 1 minute. Add pumpkin, sesame and poppy seeds.
- Stir until seeds begin to pop and become fragrant about 3 to 4 minutes. Remove from heat.
- Combine lemon, salt, pepper and sugar in glass jar. Seal and shake until blended.
- Place spinach in a mixing bowl. Add toasted seeds and dressing. Lightly toss ingredients and plate.
