Toasted Seed Spinach Salad

Not seedy as in down-and-out but packed with toothsome toasted seeds that deliver a righteous crunch.

Yield: Serves 2-4

Ingredients

  • 1-2 tablespoons pumpkin seeds, toasted
  • 1-2 tablespoons sesame seeds, toasted
  • 1-2 tablespoons poppy seeds, toasted
  • 1 tablespoon lemon juice
  • Pinch salt, pepper and coconut sugar
  • 3 tablespoons organic olive oil
  • 4 cups baby spinach, rinsed

Directions:

  1. Heat skillet for about 1 minute. Add pumpkin, sesame and poppy seeds.
  2. Stir until seeds begin to pop and become fragrant about 3 to 4 minutes. Remove from heat.
  3. Combine lemon, salt, pepper and sugar in glass jar. Seal and shake until blended.
  4. Place spinach in a mixing bowl. Add toasted seeds and dressing. Lightly toss ingredients and plate.
